Sample Menu


Kid Friendly Week 1

Day 1


Lasagna (serves 6 to 8)
Ingredients:
  • 3/4 lb Sausage or Ground beef
  • Lasagna noodles, don’t need to cook
  • 2 cans diced tomatoes (not drained)
  • 2-3 Tbsp tomato paste
  • 1 Onion
  • 2-3 cloves garlic
  • 1 egg, beaten
  • 1/4-1/2 c. Parmesan cheese
  • 2 c. mozzarella cheese
  • 16 oz cottage cheese
  • 1 tsp Parsley, use more if you used fresh
  • 1 tsp Basil
  • 1 tsp crushed Fennel (don’t really need if using sausage)
  • 1 tsp Rosemary
  • Salt & Pepper to taste
  • Chopped spinach (I like a lot @ 3 cups)

Cooking Directions:
Cook meat with onion, garlic, fennel, and salt and pepper. Drain fat. Add tomatoes, tomato paste, basil, and rosemary. Cook on medium heat until well heated and mixed.

In separate bowl, mix cottage cheese, egg, Parmesan cheese and parsley.
Spoon meat mixture on the bottom of a 9 x 13 pan, lay 3 to 4 noodles on top of that. Layer with meat sauce, cheese mixture, mozzarella cheese, and spinach. Repeat layers ending with a little meat sauce and mozzarella cheese on top. Bake covered 375 for 35 min, uncover for the last 5 min.

Suggested Side: Choice of Salad, French/Garlic Bread

 

Day 2


Sweet & Sour Chicken (serves 4-5)
Ingredients:
  • 2 c. diced cooked chicken
  • 1/2 c. chopped onions
  • 1 1/2 c. pineapple chunks
  • 1 1/4 c. water (I substitute with a little pineapple juice)
  • 2 c. carrots, chopped
  • 1 green pepper, cut in strips
  • 3 chicken bullion cubes
  • 1/4 c. brown sugar, packed
  • 2 Tbsp cornstarch
  • 1/4 tsp ginger
  • 1/4 c. ketsup
  • 2 Tbsp vinegar
  • 1 Tbsp soy sauce

Cooking Directions:
Saute onion in 1 Tbsp butter until tender. Add water, carrots, & bullion. Cover & simmer for 5 min. In separate bowl, combine sugar, cornstarch, & ginger. In separate bowl, combine ketsup, vinegar, & soy sauce. Add both combinations to vegetable mixture. Cook until clear & thicken. Add chicken, green pepper, & pineapple. Cover & simmer for 5 min.

Serve over rice.

 


Day 3   -Easy Day


Bistro Ham Sandwiches

Ingredients:
  • Sandwich Bread
  • Mayo or Butter
  • Granny Smith Apples, thinly sliced
  • 1/2 lb Deli Ham slices
  • 1/4 lb Deli sliced Swiss cheese
  • Mustard, any type

Cooking Directions:
Spread Mayo on outside of bread. Spread mustard on inside of bread. Layer ham, cheese, and apple in sandwich. Cook in skillet on medium-high on both sides until cheese is melted.

Suggested Side: Fruit of choice


Day 4   -Easy Day

Green Chilies and Cheese Burritos (enough for about 5 burritos)

Ingredients:
  • 1 can Refried Beans
  • 1 4 oz can diced green chilies
  • 1/2 c. Cheddar cheese, shredded
  • 1/4 c. onion, finely diced
  • Burrito size tortillas
  • Milk
  • Salsa

Cooking Directions:
Combine beans, chilies, cheese, onion, and small amount of milk in saucepan. Heat through. Top w/ salsa and fold into burrito.

Suggested Side: White corn
